OPENDJ-3089 Cleanup, renaming and javadoc update in SchemaBackend and SchemaHandler

- Update the behavior for extra attributes to make sure they are update
consistently
- Ensure all the changes are performed on a fixed schema version
- Improve naming and javadocs
